COUNTRY SPECIALS: NETHERLANDS

 

 For this month's "country specials" we look to the Netherlands.  This small Northern European country is sometimes (and inaccurately) referred to as Holland even though North & South Holland make up only 2 of the 12 Netherland provinces!

That's enough geography for today...let's eat!

LHAAGSE EENDENRAGOUT (Duck of the Hague)

This Dutch style braised duck is a modern interpretation of a handwritten recipe from a excercise book of a Hague Cook School pupil from the 19th century  15.95

MOSSELMAAL (Mussel meal)

Penn Cove mussels, braised fennel with a splash of Pernod & crusty bread.  14.95
